Steak Tartare of Veal

Finely chop the veal escalope.

Finely chop the gherkins, parsley, shallot and capers. Carefully open the quail eggs and keep only the yolks. Carefully place the tartare and the yolk on your plate and stir everything together when you eat.

  • 2 quail eggs
  • 1.5 tsp mini gherkins
  • 1.5 tsp capers
  • 1.5 tsp shallot
  • 1 tsp fresh flat-leaf parsley
  • 1 tsp mustard
  • 1 tsp mayonnaise
  • Pinch of sea salt
  • Pinch of black pepper
