Deep-frying veal




  1. Take the veal out of the fridge
  2. Spread the veal on kitchen paper
  3. Dab the veal dry
  4. Use a wok pan
  5. Take a deep fryer
  6. Make the tempura batter
  7. Dust the veal all around with tempura flour
  8. Pass the veal through the tempura batter
  9. Put the flame up high
  10. Place the pan on the flame and allow it to get hot
  11. Put about one and a half litres of sunflower oil in the pan
  12. Let the temperature of the oil rise to about 190-200°C (374-392°F)
  13. Put the strips of veal in the pan and deep fry the veal with regular scooping for about 2.5 minutes until done
  14. Remove from the pan and drain on kitchen paper
  15. Bon appétit!
