Mix the mince with the onion, garlic and eggs, and season with pepper, salt and Italian herbs. Roll into 4 equal balls and press down to form burgers. Grill in a grill pan or on the barbecue until nearly done. At the end, place a slice of Cheddar on each veal burger so it starts to melt.
Fry the onion rings until they are golden brown. Slice the rolls open en briefly grill or heat them in the oven. Top the rolls with the lettuce, tomato, burger, onion rings and gherkin slices.
Serve with the sauce of your choice.
