For the sauce: blitz the mayonnaise, capers, ketchup, canned tuna and anchovies with a hand mixer. Cut the veal into small strips and fry them in a pan. Season to taste with salt and pepper. Sear thin slices of tuna, like tataki.
Spread some olive tapenade and sauce on a bun. Top with rocket, tomato, fried veal and a few slices of seared tuna. Finish with parmesan flakes.
