Soak the cocktail sticks in cold water. Halve the veal escalope and coat lightly.
Spread mustard over one side of the escalope and place a slice of Merano bacon and a sage leaf on top of each one. Fold the escalope together and secure with a cocktail stick.
Oil the grill and place the veal on it. Always grill veal indirectly. Ensure that the grill is at a constant temperature of 150 to 160°C (302 - 320°F). Grill for approx. four minutes on each side.
Wait until the veal saltimbocca is cooked before seasoning lightly with salt and freshly ground pepper and serve immediately. Delicious with a green salad and fresh ciabatta bread.
