Shoulder of veal (Blade)

> 60 minutes

oven roasted


Pre-heat the oven to 80°C (176°F) Remove any ten-dons from the shoulder. Brown the veal all over in the oil, and continue roasting in the oven. Take the veal out of the oven when the meat thermometer shows 70°C (160°F), wrap in aluminium foil for five minutes, season and slice.

Best accompanied by grilled vegetables of the season.


  • 800 g shoulder of veal (blade)
  • Sea salt

  • Freshly ground pepper
  • Vegetable oil for browning
